Fresh fish: easy to love, easy to fillet
Monday, September 14, 2009 at 20:59 I was filleting a whole arctic char for dinner this evening … and thought “hey, maybe some people don’t know how to do this.”
It’s so simple.
Now, you may be asking why I’d even buy a whole fish. Because I want the most and the freshest for my money. Plus, I hadn’t seen arctic char available as a fillet anywhere. By doing it myself, I got exactly the size and number of fillet portions I wanted, with a lovely carcass left over for fish stock. The stock will go into my freezer for a nice winter boullibase.
