    Green cauliflower is a hit for those who don't like cauliflower

    Natacha really doesn’t care for cauliflower, and I can’t say that I love it unless it’s covered in a sauce- au gratin style. So, I was looking for someway to prepare it that is light, and yet packs a lot of flavor to offset the rather pungent nature of the cauliflower itself - other than cooking it in a Indian tomato curry style ragout with other veggies as I usually do. When I saw the green cauliflower in Whole Foods today, I knew I had to try it.

    Last night at the company Christmas party, one of the dishes we tried out involved a salad dressing that was really new to me - salted Morrocan Lemons with onion and garlic in olive oil. Aside from using this as a salad dressing - which will come in time - I thought this would be a great twist for a vegetable.

    Boy, was I right. The preserved lemon is just the right kick it needed.
