    Fast, easy dinner for the tired worker drone

    I was in no mood to cook a big dinner tonight. It’s been a longish week, and I’d gone to personal training after work. It’s been a while since I’d done full on Pilates reformer work and forgotten how freaking hard it is. Whew!

    When I’m like this, it’s eggs for dinner. Hands down.

    Eggs are so healthy, so easy on the budget and the soul. They combine with darned near anything that might be laying about in the refrigerator.

    In this instance, laying about meant: sliced ham for sandwiches, some onion, and chopped sweet gherkin pickles to scramble with the beaten eggs. There were also some small russet potatoes that begged to be microwaved, and some on-the-vine tomatoes from Costco that lend themselves to being grilled/broiled.

    Add some toasted whole grain bread, and voila! I figure it came in somewhere about 300-350 calories and almost no fat other than the egg.

    What to do with roast chicken and turkey leftovers

    Leftover roasted poultry offers up a vertible bonanza of possibilities:

    Open face hot chicken or turkey sandwiches on whole grain bread, with a bit of gravy and cranberry sauce. Serve with a nice salad.

    Hearty turkey or chicken noodle soup.

    Weeknight superfast dinner: Fish tacos

    I adore fish tacos and they’re so easy and quick to prepare as you can see from the following video segment. This is truly a 30 minute start to yummy meal.

    On your way home, stop at the store and get some fresh fish such as snapper ( or have some thawing out in the refrigerator at home ), some packaged coleslaw, limes, fresh cilantro, a red onion, small corn tortillas and either some Mexican Crema or Creme Fraiche ( sour cream with work also). I’m assuming you already have some olive oil in the pantry.

    Snapper is the best choice, but many other types of fish will work. Just select something with a firm flesh. I could see this with Rock Cod, Sea Bass, Orange Roughy and even Mahi Mahi. You might even consider trying this with some medium size shelled shrimp.

    Another nice touch not explored here: small diced mango salsa. If you see some in the grocery store, give that a try. Otherwise, we’re talking a ripe mango cut into small dice,juice of a fresh lime, olive oil, red onion chopped, cilantro in a rough chop. Toss a bit of sugar and a dash of salt on and mix. You might also add some diced red sweet bell pepper or some chopped jalepenos for a bit more heat and color.

    Have some nice white wine while you work!
