Weeknight superfast dinner: Fish tacos
Monday, October 20, 2008 at 21:12 I adore fish tacos and they’re so easy and quick to prepare as you can see from the following video segment. This is truly a 30 minute start to yummy meal.
On your way home, stop at the store and get some fresh fish such as snapper ( or have some thawing out in the refrigerator at home ), some packaged coleslaw, limes, fresh cilantro, a red onion, small corn tortillas and either some Mexican Crema or Creme Fraiche ( sour cream with work also). I’m assuming you already have some olive oil in the pantry.
Snapper is the best choice, but many other types of fish will work. Just select something with a firm flesh. I could see this with Rock Cod, Sea Bass, Orange Roughy and even Mahi Mahi. You might even consider trying this with some medium size shelled shrimp.
Another nice touch not explored here: small diced mango salsa. If you see some in the grocery store, give that a try. Otherwise, we’re talking a ripe mango cut into small dice,juice of a fresh lime, olive oil, red onion chopped, cilantro in a rough chop. Toss a bit of sugar and a dash of salt on and mix. You might also add some diced red sweet bell pepper or some chopped jalepenos for a bit more heat and color.
Have some nice white wine while you work!
